Keen on Quinoa

September 23, 2010

Let’s face it who isn’t trying to incorporate healthier foods into their diets. Whole foods, natural foods, and super foods are quite the buzzwords these days.

For me it is all about balance. I enjoy pizza, pasta, and dessert as much as the next guy. I find that when I have a good balance of healthy foods in my diet, I am able to enjoy the once in a while indulgences without feeling guilty (hello Brie…).

A new health food staple in my pantry is Quinoa (pronounced Keen-wah). Found in the natural health food aisle at many major grocery stores, Quinoa is a great substitute for rice or couscous. It is also extremely easy to prepare. I always rinse the Quinoa before I cook it. Use 2 cups liquid (water or broth) to one cup Quinoa and bring to a boil (at this point I sprinkle in TSG Tearless Onion and Chives Seasoning Blend or Over-the-Edge Herbed Spinach Blend). Simmer on low for ~15 minutes until liquid is absorbed and the germ ring is visible.  From there the possibilities are endless – add chopped veggies for quick pilaf, use cold in a salad, or I have even mixed plain cooked Quinoa with yogurt for a high protein breakfast.

Thanksgiving  is the biggest day of the year for food consumption. The second biggest day? If you guessed Christmas, Easter, or the 4th of July guess again – that honor goes to Super Bowl Sunday! Bring on the chips (14,500 tons will be consumed), dip, wings, pizza, meatballs, and veggie platters (remember — it’s all about balance…). [...]
